Mayonnaise & Alioli
2 egg yolks
1 tbsp mustard, medium strength
100ml olive oil
Salt & Pepper
Very simple: Beat 2 egg yolks and 1 tablespoon of normal mustard with a whisk, until reaching a foamy consistency. Now slowly add a total of around 100ml olive oil (in small doses) and by all means, keep stirring. For the normal mayonnaise, taste and season with lemon juice, salt, and pepper – finished!
In order to make aioli from this home-made mayonnaise (i.e. garlic mayo), do not season the mayonnaise. You now need 2 garlic cloves and salt. Peel the garlic and chop very finely. Then spread the hacked garlic on a small board, sprinkle on some salt, until the garlic is more or less covered. Now crush the garlic thoroughly with the knife and with the help of the salt, grind. This step should be repeated until a garlic mash is achieved. Then stir the mass into the mayonnaise. Taste and season with salt and pepper.
